I am normally a mix girl for cupcakes. The texture of these is, well, different. Perhaps more similar to a pound cake?
And the frosting, if I knew how to type the sound of choirs singing, this would do it.

Coconut? Lime? What’s not to love! I will try with gluten free flour and organic sugar and let you know how it turns out! I wish I could make them RIGHT NOW.
For me, it’s baking cookies. Chocolate chip, monster, peanut butter, snickerdoodle–nothing fancy. Mindless relaxation. Heavenly scents. Then the party in my mouth. 🙂
Of course, the first thing I focus on are the photographs. Yes. I drool over the photographs, but I’m sure the cupcakes are just as delicious. Because I love coconut and lime just as much.

I love both coconut and lime. I found the recipe. If I can find my way out of the maze of “things to do” I may make some for my husband this weekend.
If there ever was a poetic way to describe the process of baking, you have found it! I am big fan of coconut, not so much of lime but this made my mouth water. My favorite desert is the apple pie my husband makes.
